Ice Cream Insanity!





OMG, if you want to follow Whitney's tacos with an ice cream that will knock your socks off....have I got one for you!!

Magnum. Just discovered them. It is an ice cream on a stick like....well I believe that it IS better than sex. Thick, rich vanilla bean ice cream, dipped in a crispy chocolate coating. Followed by carmel sauce and a Belgian chocolate coating. I had to close my eyes and breath deeply as I ate it.

There are many other flavors such as almond and double chocolate. Yes, they are a bit pricey for a box of three, but well worth it!! I found them at Giant Eagle. If you are as crazy for ice cream, as I am, you should get these ASAP!!

Taco Night!!!





So the other night I decided I needed to pull out the tequila, limes, and margarita mix and get into mexican mode. It was time for taco night! Along with the craving for some fresh salsa, I also love anything and everything mexican with guacamole! So of course I had to make some homemade guac.



First time making guac and it was so so soooo easy! I peeled and mashed 3 ripe avocados added in some chopped onions and tomatoes. Then I mixed in some lime juice and my favorite thing in the whole world when it comes to seasonings (garlic, duh!). The combination of all these flavors was heaven in my mouth. I was in a little mexicoma for the remainder of the evening.



The salsa was easy to make as well.. 5 ripped tomatoes chopped. One white onion. Cilantro. Garlic. Lime Juice. And salt. I usually let it marinade for a day so all the flavors combine and the salt breaks down the tomatoes a bit more. But still amazing and fresh!

Corkscrew Girls at Rockne's






The girls got together last night for another round of food, laughs and cocktails. Seems that everyone was in the mood for salad. Rockne's does have a good salad and you can leave off the pita bread and add hard boiled egg. Yum.

Two of us had their Gyro Salad, which is my fave, that is made with gyro meat,
Greek olives and Feta cheese. Served with a delicious cucumber dressing. The other gals were in a chicken kinda mood. One had the Buffalo chicken salad and the other the chicken with raspberry dressing.

To finish it off, those of us not following Lent, had a mini dessert. I had the mini peanut butter pie and someone else had a mini cheesecake. Mmmmmm it was just enough!

Ahhh, another successful meeting down and the next one already planned and maybe even a future weekend at a gambling resort!! That would be fun.

Melange in Beachwood








Matt and I went to a great restaurant called Melange in Beachwood last night, and I had to blog about it! Especially for Whit's sake. (We went there a few years ago for New Year's Eve, but Whitney wasn't feeling too well before the meal. Totally un-Melange related). We have been here a few times, and worth a try for anyone looking for some great food!

I LOVE cheese of course, and they have this amazing appetizer called the Goat Cheese Fondue. It has Lake Erie Creamery goat cheese, grapes, strawberries, raspberries, blueberries, and , toasted bread. I took some pictures again of course, and it is amazing! A truly Corkscrew girl appetizer!

I got the Salmon “Oscar” Style, with crab crusted salmon, asparagus, hollandaise sauce, potato pancakes
. I am a seafood girl, and this was great! Matt got the Bleu cheese and short rib gnocchi, with housemade herbed gnocchi, roasted short rib, wild mushroom, bleu cheese, sherry pan sauce. WOW. This was AMAZING.

Matt is a dessert guy, and when he saw this he had to get it. Even though we didn't eat much because we were so full. But it was a Candy Bar Bread Pudding! It had snickers, reeses, raisonettes and Rolos in it, with vanilla ice cream and caramel on top. Any chocoholic like Matt would be in heaven.

This is a great place to go for a special occasion, or for any old night that you can't find somewhere to eat without a 3 hour wait (which was our situation last night). The restaurant is very big, and you can always get right in!

Pineapple Orange Chicken





Took the time last night to try a new recipe. Pineapple orange chicken. It was really, really good as well as quite easy! Naturally served it with a lovely red zin. Zen of Zin is one of my faves.

Orange juice, garlic, soy , ginger and butter are mixed and brought to a simmer. Then baste them over your meat as it bakes adding the pineapple in the last 15 minutes. A touch of broiling gives it a nice finish. It has a nice Hawaiian flavor and went quite well with a garlic pecan wild rice. Yum.
